Campden tablets contain potassiummetabisulfite and are a convenient way to accurately add sulfite to wine. Itsreaction in the wine releases sulphur dioxide, which acts as a sterilant and antioxidant.
To use, crush up 1 Campden tablet per gallon and mix them into your wine must, wait 24-36 hours, then add your yeast and ferment away. You can also add 1/2 crushed tablet per gallon every other racking to help the wine age out properly.
To make a sterilizing solution for equipment, we recommend crushing and mixing 16 campden tablets per gallon of warm water.
