This wine boasts a splendid and sparkling robe with shades of light lychee. It has an intense nose with aromas of passion fruit and red raspberry. The wine pairs perfectly with oysters, a salmon/shrimp/avocado/pomelo pokebowl, melon with prosciutto, or a ceviche of sea bream, making it ideal for aperitifs.
The grapes are harvested at night to maintain low temperatures, then destemmed and directly pressed for 2-3 hours. The juice undergoes cold stabilization for one week before being clarified and fermented at low temperatures (13-14°C) to preserve its color and aromas.
