The grapes are left to dry until December 1st (harvest at the end of September). A wine of great elegance, structure, and character. Very fine and precise aromas, warm and spicy, rich in notes of berries, ripe fruit, cinnamon, and pepper. Classic aromas of violets and dried roses. Warm and smooth on the palate, it pairs perfectly with red meat, game, and aged cheeses.
